Healthy Chocolate Chip Oatmeal Cookies




This pandemic has hit me hard. One of the things that has totally been thrown off is my eating habits. I used to eat relatively healthy (for a college student). Once I was sent home from college last March, that completely changed. However, I really want to get back to eating healthier and being more active. That is one of my biggest goals for this year. I am so excited to start cooking again and posting more frequently. 

I have made a 4 ingredient breakfast cookie that is really really yummy!! I think they are the perfect snack if you have a sweet tooth after dinner one night. They are super simple to make and you won't feel guilty after eating a couple! I know there are a lot of people in my shoes that really want to start working on themselves and feeding their body with the right kind of stuff. This cookie could be the start! 

Nutrition Facts
Serves: 16 cookies
Serving Size: 2 cookies
Calories: 98 per serving

Ingredients
  • 2 mashed large bananas
  • 2 cups oats
  • 1/3 cup strawberries
  • 1/2 cup peanut butter (or any type of nut butter)
  • 1/3 cup chocolate chips (optional)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit
  2. Mix together all of the ingredients unless you choose to use chocolate chips. Save the chocolate chips for last
  3. Fold in the chocolate chips
  4. Roll the cookies into 1 inch sized balls and place them onto a greased cooking sheet
  5. Smash down the balls into cookie-like shapes
  6. Bake the cookies for 12 minutes
  7. Let cool and serve!
