My friends love when I make fried pickles for them. They always help me in the kitchen when I start to prep my ingredients. Even when we all go out to restaurants together, we seem to order appetizers of fried pickles. What is so great about this recipe is that you can cook the pickles in oil, deep fried, or the air fryer. I enjoy them the most when I cook them in oil rather than the air fryer, but I seem to always want the most unhealthy option. After multiple tries in oil and in the air fryer, I think that I have perfected the most delicious, crunchy, crispy fried pickles that I have ever tried.
Serving Size: 4 pickles
Calories per serving: 210
INGREDIENTS
1 cup Krusteaz (just add water) Pancake Mix
1 cup Water
1 tbs. paprika
1 tsp. garlic salt
2 tsp. salt
2 cups Italian Breadcrumbs
16 oz. Jar Dill Pickles (chip shaped)
INSTRUCTIONS
1. Combine the pancake mix and the water in a medium sized bowl; the batter should be a bit more watery than regular pancake batter
2. Add the spices to the pancake batter and mix thoroughly
3. Lay out the breadcrumbs onto a flat plate
4. Dry off the pickles from the jar using paper towels to pat them down
5. Submerge the pickles into the pancake batter and mix them around
6. Place the pickles onto the breadcrumbs and flip them over to evenly coat them
7. FOR OIL: add oil (just enough to cover the bottom) to a medium sized sauce pan until heated; put the pickles in the oil for 1-2 minutes on each side
8: FOR AIR FRYER: place pickles into the buckets; air fry for 5 minutes on each side on 390 degrees
9. Let pickles cool and then enjoy them without your favorite dipping sauce (mine is ranch, I am obsessed with ranch)
