Sugar Cookies

What is up, everyone?!? It is Christmas season, which means that it's my favorite time of the year!!! I love the holidays and I especially love the food. I decided to make sugar cookies this week for all of my roommates and they loved them!! I made a few substitutions because one of my friends has severe food allergies to eggs and dairy. Sooooooo, the good news is that this recipe works for multiple substitutions, as well! These cookies are a huge hit and perfect to serve during the holidays. 

Side Note:

If you also have a friend with multiple food allergies, try these substitutions :) 

Try olive oil based butter instead of dairy based

Try 1/4 cup applesauce instead of 1 egg


Makes about: 24 cookies

INGREDIENTS

  • 1 cup butter

  • 1 ¼ cup sugar

  •  1 egg

  • 2 tsp vanilla extract

  • 2 ½ cups flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • ¼ cup sugar (topping)


INSTRUCTIONS

  1. Preheat oven to 350 degrees 

  2. With a stand mixer or hand-held mixer, cream together the butter and sugar until fluffy or about 1 minute

  3. Mix in the egg and the vanilla extract until combined

  4. Add the flour, baking soda, baking powder, and salt to the mixture until well combined

  5. Roll the dough into 1 inch balls and roll them into the extra sugar before placing onto a baking sheet

  6. Bake for 10-12 minutes or until golden brown around the edges
